Quick question on Player Inventories (adding and removing items)

Is there a way to just add or subtract items from player inventory by amount and item regardless of stack/slot positioning? IE take away or give 75 cobblestone and it will automatically take the stack and remainder / add stack and remainder, and is there a way to get the total count of a single type of item on the player inventory?
