So I currently run a fairly popular server on a dedicated machine using CentOS5. When getting the server setup, my main focus was getting it to install 64bit Java, and I wasn't paying much attention to what version Java I was using. So after my server being up for a few months now, I was thinking of updating my Java version to 7.

Will this break anything? Do I need to "Uninstall" java 6 first? The Minecraft.sh start-up file I am using, will I need to change it? What's the best way to go about updating?

Any help would be fantastic. The main reason I want to update, is because there's a few plugins that are only made in Java 7 that I want to use, and it may help fix some cpu/memory issues we seem to have once were over 35-40 players. Thanks!

Best thing to do is test!

Try running your plugins in your computer environment and run Java 7 with it.
