I am still confused about the current state of Bukkit...

Will server owners have to just hope a new Bukkit version is released every time a new Minecraft update is released?

Will server hosting companies probably stop?

I do not think anyone wants to spend the time removing the DMCA code, replacing it, getting it working and ready again only to have one of the other 180 contributors issue another DMCA which can be done over and over again.

Craftbukkit is pretty-much dead due to the licensing model chosen.

I think many servers will continue to live long lives on 1.7.10

Different plugins can make a server feel completely different. I have 13 in my network, some are for building, games, combat, etc.

Eventually, new replacements will come along and people will being to make the switch. I saw an interesting list of bukkit alternatives in this thread.

Only if the money dries up. As long as there is demand and money to be thrown their way, expect the services to continue. Even if each and every Minecraft-specific host disappeared, you can still host Minecraft servers on generic boxes. I use Ubuntu Server (Linux) and my know-how to create my network of servers without any pre-existing control panels, etc. Just the Linux OS, Java, Craftbukkit, Plugins and my custom Bash scripts to help automate management of the server such as backups and reboots.
