  1. Ubuntu is relativly newer packages but stable on LTS versions.

Debian is about equal to ubuntu but a bit more stable.

CentOS is older packages but more stable.(We use this where I work)

and Fedora ... just no. ITs redhats testing ground don't use it on any production machine.

And windows if you already have it and its not a monthly charge just keep it it works:) there really is no performance gains from switching to linux but linux is mutch easier to manage remotely if you know its cli.

You can also get mcmyadmin/multicraft pretty cheap if you want linux with out learning too mutch CLI They use up very little ram / cpu.

Multicraft uses next to no CPU use.........

It is your web-server configuration that is the issue.

I would recommend the one you like. I personally like Debain and that's what I am most experienced with.
Just go for what you like.

    Running Gentoo with 3.3.8-Gentoo kernel.

As mentioned above, it doesn't really matter which Linux distribution you use, as long as it's not an ancient one. Anything of the past 2 or so years will do just fine as long as you keep up-to-date with security patches :)
