You can't retexturize blocks as of now. EDIT: You could use something like VariableTriggers to substitute invisible "pressure plates".
You could also send client-side air blocks on top of pressure plates. Actually, that is a really interesting idea. Let me see if I can write something like that really quickly. No guarantees.
Well, the core of it is working, but there are still some bugs to be resolved. One, I have some ConcurrentModification exceptions to fix. Two, pressure plates are visible when you join the game. Three, I need to make it so that the plates are removed properly when the block is broken.
