   Sorry I haven't done this before, but whenever I download the latest build and extract it to my server files, it just runs the old one, help?

   Also, give us the steps you are using to update it. You should just need to download the latest craftbukkit (from the link in the FAQ) and replace the old .jar file with the new one.
