I am wanting to start a minecraft hosting company and im confused about what kind of server i want, I am looking at dedicated servers and stuff and they all top out at like 8GB of RAM and that doesnt seem right for minecraft. Do I need a VPS or something?

If you can't figure this out you should not be hosting. Not at all.

Yes. Starting somewhere is not starting a hosting company with no knowledge. If you want to fail go ahead and do it. Nobody is stopping you.

I have plenty of knowledge on the subject, I have extensive experience in server administration and website hosting. I am just asking what kind of server do people run minecraft on because clearly I do not know this one simple detail

If you do not know what is best for minecraft then I do not recommend hosting for minecraft.

To help though. I am using the 1270v3 and 1650 right now. Both beast CPU's. The 1650 is just for a Bungee proxy though. We have only 32GB per box, but our servers are pretty optimized. Using only around 12Gb in total (7-8 servers per box), averaging 150+ players. All box's using SSD's.

Oh. And please don't use multicrap.

    THIS.

I use E3-1230v2s with 32GB of ECC registered memory. I've yet to see mine break 50% usage (it only hits 50% when multiple servers are booting) on a regular basis. c:
